Welcome back campers!  We are gearing up for Cinco de Mayo!  This green chili can be made with or without the lamb/beef!

Go ahead and take a 6-quart/heavy bottomed stock pot going with 1/4 cup vegetable

oil-get oil good and hot and add lamb or beef(1-lb) Brown-off meat until…Its’ really brown!

Add: 4 cups-diced yellow onion, 1/4 cup-minced garlic, 2-Tbls.-powdered cumin

1 teasp.-each…coriander,crushed red pepper and oregano!  Really cook this hard on high heat…

We are looking for: Onions to be browned…almost…burned!  Add 1 cup of your favorite

Mexican beer…Let reduce by half…Add 2-cups-organic chicken stock and 32oz-Diced green chili/

chili puree and 1-cup diced tomatos…  Stir well, return to boiling…add 4-Tbls-roux…Whisk in very well-Let simmer for 20min.!


12 oz.-bag Eddie’s Spaghetti Organic Pasta-Cook for 9 minutes(see video…)

3-4lb-organic chicken-simmer for 1 hour w/5 or 6 bay leaves.

1-cup fresh diced mango

For the Dressing…2-cups mayonnaise…8oz-organic coconut milk…2-8oz cans

crushed pineapple…1/4 cup minced chives…1and1/2 cups pineapple juice

1/2 cup toasted coconut flakes…4 Tblsp-good quality curry powder…garnish with

chopped cilantro-toasted coconut-black sesame seeds and lime wedges!

See video for technique coaching!  Campers…This is the final recipe for your new salad!  I made a few changes based on what the salad becomes after overnight ingredient marrying!  If you already made this…drop in extra 12oz can of crushed pineapple and 1and1/2 cups pineapple juice!-Healthiest regards-Coach Curt

Here we go again in the camp kitchen!

Into the blender goes…..
4 tablespoons ginger
4 tablespoons garlic
4 tablespoons shallot
1/3 cup red wine vinegar
1/4 cup soy(or teriyaki sauce…)
1/2 cup water
spin all of the above on high speed for 20 seconds
Turn off machine and add the following:
3/4 cup coconut milk
2/3 cup organic peanut butter
1/3 cup agave syrup
juice of 1/2 lime
Blend the above on high speed for twenty seconds-remove plug handle of lid and start adding 3 cups of canola oil in a slow/steady stream.
turn off machine and add:
1/2 teaspoon white pepper
4 tablespoons chopped cilantro(roughly)
Turn on high speed for about 10 seconds-You are done and have just produced your own Thai Peanut Salad Dressing that has no “stabiizers”, high fructose corn syrup(HFC), preservatives or any of the other “funky things” listed that should make most us ask “What in the heck do think that would do to the average human over an extended period time!?”
